Another of my passions, particularily this past year, has been the quest for good health. As you read through this website you will find links to books and articles about this mission of mine. The short version is that I have found out I am allergic to wheat and that I am iron deficient. You don't have to be allergic to wheat to feel the negative effects on your body; many people react to the process wheat goes through before it reaches the table. The protein in wheat was preventing iron from being absorbed in my body, contributing to my iron deficiency. Wheat has also been known to cause bloating, headaches and many more symptoms. My doctor also told me I have low ferritin levels. Ferritin is a protein in your body that stores iron. Iron deficiency is a slow process; iron from ferritin is released to compensate for low iron in the blood, causing the ferritin level to decrease. Symptoms of iron deficiency include fatigue, headaches, dizziness, cold hand & feet, thyroid problems, pale & dry skin, brittle nails, and breathing problems such as asthma.
